INGREDIENTS
- 1 onion, chopped
- 6 cloves garlic, minced
- 1 tablespoon olive oil
- 2 teaspoons chili powder (fajita seasoning)
- 1 teaspoon dried oregano
- 1 (10.5 ounce) can petite cut tomatoes
- 2 tsp chicken base
- 1 1/4 cups water (just enough to cover veg's)
- 1 cup whole corn kernels, cooked
- 1 (4 ounce) can chopped green chile peppers (or 1/2 green pepper chopped)
- 1/2 (15 ounce) can black beans, rinsed and drained
- 1/4 cup chopped fresh cilantro
- 1 large can chicken
- 4 oz Velvetta cut into 1/2 in cubes
DIRECTIONS
In a medium stock pot, heat oil over medium-high heat.
Saute onion and garlic (& opt'l green pepppers) in oil until soft.
Stir in chili powder, oregano, tomatoes, chicken base, and water.
Stir in corn, chiles, beans, cilantro, and chicken.
Bring to a simmer.
