These sugar-free, whole wheat Glorious Morning Muffins are delicious.

2 cupswhole wheat flour
2 tspbaking powder
1/2 tspbaking soda
1/4 tspsalt
1 1/4 cupSplenda(tm)
2 tspground cinnamon
2 cupsgrated carrots
1/2 cupraisins
1 cupwalnuts
1/2 cupunsweetened, shredded coconut
1apple - peeled, cored and grated
3eggs
2 tspvanilla
1/4 cupoil
1 cupmilk

Pre-heat oven to 400°F. In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon and salt.
Stir the carrot, raisins, walnuts, coconut and apple into the mixture.
In a separate bowl, beat the eggs oil and vanilla. Stir the egg mixture into the flour and fruit mixture just until combined.
Spoon the mixture into well greased muffin cups filling to the top. Bake for 20 minutes.
Makes 12 muffins.
